Brownies for breakfast? Yes please! These Chocolate Brownie Oat Bars taste like a real treat but are packed with healthy oats, perfect for a delicious breakfast the whole family will love.

Chocolate Brownie Oat Breakfast Bars served with a dollop of yogurt and fresh yogurt.


I’ve been obsessed with Breakfast Oat Bars the past few months. Having something ready made and in fridge that I can just heat up and give the kids in the morning is so handy.

And these Chocolate Brownie Oat Breakfast Bars are possibly my best yet. Believe me when I say I’ve been eating them for three days straight!

Chocolate Brownie Oat Breakfast Bars dived in to portion size squares.


To start add a mashed banana, one egg, honey, vanilla extract and milk to a large bowl and whisk until combined.

Then add in oats (just regular porridge oats are fine) along with some cocoa powder and mix again.

Dry ingredients being added to the mixing bowl.


Pour the mixture into a lined brownie dish and top with chocolate chips.

Any tin that’s roughly 8×8 inches in absolutely fine.

Mixture poured into an oven proof dish ready to be put into the oven.


Bake in the oven for 30 minutes then leave to cool for about 10 minutes before cutting into 9 squares.

This will ensure the bars are completely firm and makes it much easier to cut them.

You can serve them straight away. I like to serve the with some greek yogurt and fruit.

Ingredient Substitutions


Banana – The banana flavour is very subtle but if you’d rather not use it then you can substitute it for 120g of apple sauce

Egg – To make these bar egg free then use an egg replacer

Honey – This can be substituted for maple syrup or any type of liquid sweetener.

Milk – Dairy free milk will work just fine in this recipe

Description​

Ingredients​

  • 1 banana, mashed
  • 1 medium egg
  • 3 tbsp honey
  • 1 tsp vanilla
  • 400ml milk
  • 250g oats
  • 25g cocoa powder
  • 30g chocolate chips

Instructions​

  1. Preheat the oven to 180c fan and line an 8×8 inch dish with parchment paper.
  2. Add the mashed banana, egg, honey, vanilla and milk to a large bowl and whisk.
  3. Add the oats and cocoa powder and mix again until well combined.
  4. Pour the mixture into the lined tin and top with the chocolate chips.
  5. Bake for 30 minutes.
  6. Allow to cool for at least 10 minutes before cutting into 9 squares.
  7. Serve with yogurt and fruit.

Notes​


These bars will keep in the fridge in an airtight container for up to 3 days. They can be eaten cold but taste best when warm. Reheat in the microwave for 30 seconds.

They can also be frozen. Defrost in the fridge overnight and reheat as above.
