Mini Chocolate Banana Breads with hidden veggies. Perfect for a quick homemade snack for kids!

Mini Chocolate Banana Breads served on a plate and garnished with fresh strawberries.


I’m still on a mission to keep making as many Homemade Snacks For Kids as I can, filling the fridge and freezer with lots of options so we can reduce shop bought snacks a little.

A couple of weeks ago I make some Mini Chocolate Chip Banana Breads. They were super popular so today I’ve made a slightly different version with more chocolate and also some hidden veg in the form of grated courgette.

The first step is to add mashed banana, egg, milk, butter and honey to a large bowl.

Mix well to combine all the ingredients. Then add self raising flour and cocoa powder.

Next, grate some courgette. I used a box grate on a finely grated setting.

This gives thin strips of courgette which cook in well to the banana bread mixture and aren’t too obvious to the eye.

If you think your kids won’t tolerate seeing any green at all then you can peel the courgette before grating, so that you are only using the white of the vegetable.

Add the grated courgette to the banana bread mixture and mix until it has all incorporated.

Spray an individual brownie tin with spray oil or rub with a little butter to grease it well.

Then divide the mixture between the 12 holes. If you don’t have an individual brownie tin then a muffin tin works perfectly fine.

Bake for 19 minutes and then leave the mini banana breads to cool for a few minutes in the tin.

This will make it much easier to remove them.

Storing & Freezing


They will keep in an airtight container for up to 3 days.

You can also freeze them. They will defrost quickly in the just a couple of hours so you can pop them straight into lunchboxes from the freezer and they will be ready to enjoy by lunchtime.

Enjoy as a snack at home or pop into lunchboxes if your kids are allowed a chocolate treat at their school or nursery.

Description​

Ingredients​

  • 1 banana, mashed
  • 1 medium egg
  • 150ml milk
  • 50g melted butter
  • 2 tbsp honey
  • 130g self raising flour
  • 1 tbsp cocoa power
  • 85g courgette
  • 20g chocolate chips
  • spray oil

Instructions​

  1. Preheat the oven to 180c fan.
  2. Add the banana, egg, milk, melted butter and honey to a large bowl and mix well.
  3. Add the flour and cocoa powder and mix again.
  4. Finely grate the courgette and then squeeze to remove as much of the liquid as you can.
  5. Add to the bowl and mix well.
  6. Grease a 12 hole brownie tin or muffin tin with spray oil or a little melted butter.
  7. Add the mixture to the tin holes and then top with the chocolate chips.
  8. Bake in the oven for 19 minutes.
  9. Allow to cool for a few minutes in the tin before removing.

Notes​


These Mini Chocolate Courgette Banana Breads will keep in an airtight tin for up to 3 days.

They can also be frozen. Defrost at room temperature in a couple of hours.
